  • Achieves budgeted food and beverage sales, labor costs, and profitability;
  • Timely analysis of food and beverage prices in relation to competition;
  • Participates and gives recommendations towards food and beverage activities;
  • Hosts potential and regular guests;
  • Prepares and champions sales promotions;
  • Coordinates with Marketing Communications on the creation of marketing collaterals;
  • Spearheads competitive analysis every six months by calling competition and data gathering such as banquet kits, venue rental spaces, and others;
  • Champions telemarketing to previous clients to inquire about possible future bookings;
  • Develops and maintains all department control procedures;
  • Handles all food and beverage inquiries and ensures timely call back within 24 hours;
  • Manages large function billings and oversees medium to small function billings with particular regard to accuracy and timeliness, within 48 hours;
  • Ensures that the evaluation forms are accompanied with their respective invoices;
  • Gathers large events and oversees medium to small events with their guaranteed attendance numbers, at least three (3) business days in advance of functions;
  • Completes monthly forecast;
  • Attends and actively participates during the weekly Food and Beverage meeting and Department Heads meeting;
  • Assists in menu planning and pricing;
  • Develops and maintains the department manual;
  • Supervises the weekly payroll input;
  • Easily reachable to hotel staff at all times in case of emergency;
  • Must have a complete knowledge of Fire Procedures;
  • All other duties as assigned by the General Manager;
  • Participates in Manager on Duty shifts as required;
  • Assures bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits;
  • Assures the periodic maintenance of bar control policies;
  • Assures completion of requisitions where it is deemed necessary;
  • Assures the completion of weekly schedule and shift duties, while: (a) maintaining a labor cost below the maximum of 15%, and (b) assuring adequate and consistent completion of this task;
  • Completes the monthly inventory;
  • Assures timely completion of function bills;
  • Assures the ordering and purchasing of beer, wine, liquor, premix canisters and canned soft for food and beverage and vending;
  • Ensures that purchase requirements of small wares, lines, etc. are up to date;
  • Consistently checks the Banquet Food and Beverage quality, Banquet services and pallet presentation;
  • Ensures that services meet customer specifications;
  • Maintains outstanding quality of meeting room set-up;
  • Liaises on an ongoing basis with the Sales Department to ensure all client requirements are met;
  • Works with the Head Chef to ensure all arrangements and details are dealt with;
  • Establishes a rapport with groups to ensure guest satisfaction and repeat business;
  • Minimizes the number of customer complaints and take necessary action on the existing ones;
  • Ensures a professional attitude and proper business attire when on property, ready to meet or service a client at any time;
  • Ensures that the team members maintain a professional attitude, pleasing appearance, and uniform standards;
  • Ensures collaborative teamwork relations with coworkers and management;
  • Maintains quality of food and beverage services and proper department phone handling;
  • Attends meetings with convenors and confirms proper set-up of the function room at time of function;
  • Oversees staff training and development;
  • Handles personnel selection and ensures proper hiring and termination procedures;
  • Ensures that the food and beverage team members adhere to departmental meetings;
  • Responsible for high employee retention in the food and beverage department;
  • Maintains and ensures overall satisfactory operations at par with competitors; and 
  • Reports any deficiencies in equipment and facilities.
